From the vine to the glass

The vine...

To best explain their identity and the qualities of their landscape through their wines, the Wine producers of Saint-Théodorit decided on variety. Hence, one finds at our vineyard the following types of grapes :
- Chardonnay and Sauvignon blanc which are vinified in white
- Grenache, Syrah and Cinsault into rosé
- Cabernet-Sauvignon and merlot for our V.D.P. d'Oc red, and also grenache, syrah and carignan for the V.D.P. Duché d'Uzès.

To the Chai,

This diversity of vines gives a prolonged ripening period, and hence a longer harvesting season. This gives a good reactivity time in the winery where approximately 14,000 hectolitres of wine are vinified. Note: Each carefully selected grape variety is vinified separately. This gives us the freedom to blend together the different grape characteristics to produce the best result possible. In addition, we have specialised equipment for making rosé, including amongst other things:

- 2 pneumatic presses for more flexibility when selecting grape juice.
- 2 refrigeration units to control the temperatures at all stages of the transformation.

-V.D.P. Cévennes Sauvignon Blanc 2006
To begin with floral, the bouquet reveals thereafter hints of exotic fruit.
The heavy attack enhances what one can describe as the aromatic carrier: fruit! Finally appears a light acidulousness which leaves us with a feeling of freshness and sharpens our appetite! What is more, this is a true aperitif wine !!!

-V.D.P. Oc Cabernet-Sauvignon Rosé 2006
This time, the key word of the tasting, is freshness! Through the stony bouquet seeps a perfume of fresh red fruits (strawberries and raspberries). Mixed with a soft sweet taste, these flavours produce a gourmet wine.

-V.D.P. Duché d'Uzès Rouge 2006
Here, in the bouquet the fruits are red and very ripe, although it is a combination (syrah, grenache, carignan) it is all together in the style of a syrah. The tannic but silky impression of the syrah 2006 still requires a little more time to reach perfection and to be appreciated to its just value. This said, it is an exceptionally, fine fruity wine.


WINE PRODUCERS OF SAINT-THEODORIT Welcome to Pays d'Oc, between the Cevennes and the Duchy of Uzès... Saint-Théodorit is in the Gard (30) region, at the intersection of the routes between Nimes/Le Vigan and Alès/Montpellier, near to the Nationale 110 . Dominated to the North by the foothills of the Cevennes, the vineyards of our wine co-operative extend over 216 hectares. It is mainly distributed through the communes of Saint-Théodorit and Savignargues. This privileged localisation allows us to be included in various local wine appelations (V.D.P.): V.D.P. d'Oc, V.D.P. du Gard, V.D.P. des Cevennes. Lastly, we also produce V.D.P. Duché d'Uzès. The Duchy, which overlooks its vineyard, is on the way to becoming an "Appellation d'Origine Contrôlée" and is about thirty kilometres to the North-East.
